Lemon & Garlic Kale w/ Caramelized Onions


If any of you are Modern Family fans like I am you may recall the episode that features the lovely winter green that is kale.

On this particular episode Mitchell claims kale is "more of a garnish and not ready to anchor a meal," but I beg to differ.

I love kale for several reasons...

It's versatility in the kitchen makes it an easy companion to any cook and the fact that it's nutritionally dense doesn't hurt either.

So before I give you this yummy, simple and extremely quick recipe, let me share with you the benefits you'll be getting by eating this generous green:

Kale is rich in beta carotene, vitamins K and C, and calcium. It also contain sulforaphane (an anti-cancer chemical). By eating Kale, you'll also be boosting your body's ability to repair DNA cells.

Sounds too good to be true, right?

Wrong.

It is indeed healthy and delicious!

Now let's get cookin.....


What You'll Need:
servings: 2


1-2 bunches of kale
2 cloves garlic, minced
1/4 cup sweet onion, sliced
1 TBSP olive oil
1-2 tsp. lemon juice
dash of salt
dash of pepper


Directions:

Take your kale bunches and remove the leafy parts from the stem, breaking it into pieces. Place the pieces into a colander.




Once you've completed this step, transfer the colander to the sink, rinse the kale thoroughly and set aside.


Now, mince your garlic and add it to the skillet in which you will cook your kale..


Next, slice your onion and add it, along with the rinsed kale, to the skillet as well...




Now we're going to add the olive oil, lemon juice and salt and pepper to the kale and sauté on high for about 4 minutes, or until the onions are caramelized and the kale is wilted slightly.



That's all! Wasn't that easy?
Now transfer these leafy heroes to a plate and enjoy!
